Helmed by the renowned chef Tam Kwok Fung, the “Chef Tam’s Seasons” restaurant at Wynn Palace epitomizes the art of “seasonal eating.” This culinary philosophy is expressed through a delectable fusion of traditional Chinese culture and Cantonese cuisine. To elevate the dining experience, the Chinese wines featured on Wynn Palace’s wine list perfectly match with the culinary creations at “Chef Tam’s Seasons.” Guests are invited to savor the harmonious symphony of flavors, relishing the allure and elegance of Chinese wines with their meal.

彩蝶環繞

步入永利皇宮的「譚卉」,迎接我們的是一扇精心雕琢的皮製大門,繼續往內探看則是一處散發溫暖氛圍的米黃色大廳。懸掛中央的吊燈頗具點睛之筆,由700多隻玻璃彩蝶組成,與一旁的花藝擺飾相得益彰,彷彿置身一座充滿詩意的花園,而每位賓客的味蕾也悄然被喚醒,期待進一步品味由名廚譚國鋒精心打造的每道粵菜佳餚,以及與頂級中國葡萄酒的搭配。

Encircling Butterflies

Stepping into “Chef Tam’s Seasons” at Wynn Palace, we are welcomed by an intricately carved leather door that leads into a cordial, beige-toned hall. The captivating centerpiece chandelier, adorned with over 700 glass butterflies, complemented by floral arrangements, quintessentially reminisces a poetic garden, subtly reviving the palates of every guest. Anticipation mounts as diners prepare to savor the renowned chef Tam Kwok Fung’s meticulously crafted Cantonese dishes, paired with premium Chinese wine.

時令藝術

行政總廚譚國鋒的料理生涯中,不但招待過各國皇室與巨賈,更曾遊歷過世界各地,這使得他持續保有挑戰與創新的想法,同時也精進自己的手藝。譚國鋒希望「譚卉」,能打造出最好的粵式料理,所以他決定把粵菜「應時而食」的特式加以昇華,依據節氣的變化,蒐集時令食材,進而設計出以二十四節氣為創作理念的主廚季節賞味菜單,按照廿四節氣、每十五天換一次菜單,致力讓賓客在「譚卉」感受粵菜的傳承與革新。這也是為何「譚卉」能在開幕不到一年就獲得《香港澳門米芝蓮指南2024》榮獲米芝蓮一星以及登上2024 年度「亞洲50最佳餐廳」榜單,同時奪得「澳門最佳餐廳」殊榮的原因。

Art of Seasonal Ingredients

In his culinary journey, Executive Chef Tam Kwok Fung has served royalty and magnates from various countries. His extensive travel experiences have fueled his passion for innovation and refinement in his craft. At “Chef Tam’s Seasons,” Chef Tam aims to create the finest Cantonese cuisine by elevating the tradition of “seasonal eating.” Drawing inspiration from the 24 Chinese solar terms, he sources seasonal ingredients and designs a chef’s tasting menu that changes every fifteen days, reflecting the natural rhythms of the year. Chef Tam’s commitment to both tradition and innovation in Cantonese cuisine has quickly garnered acclaim, the restaurant earned it’s first  Michelin star in the “Michelin Guide  Hong Kong and Macau 2024”, and listed on the “Asia’s 50 Best Restaurants 2024” and it’s named “Best Restaurant in Macau.”

對於懂吃的饕客們來說,美食與美酒的搭配肯定是味蕾的極致體驗。在「譚卉」,賓客們不僅能感受到這份美好的體驗,更有主廚以及專業侍酒師確保每一瓶葡萄酒與菜餚間,是否有達到最佳的共鳴。近年來中國葡萄酒在市場上不容小覷,像是在「永利臻典——中國葡萄酒大賽」中,即有多款葡萄酒脫穎而出,例如:龍亭酒莊的珍藏小芒森乾白2020,產自山東煙台蓬萊,其清爽怡人的淺金黃色酒液,散發濃郁又清新的檸檬、百香果、奶油、金銀花及木桶香氣,非常適合與廣府風味的開胃前菜作搭配;另外「長和翡翠珍藏馬瑟蘭 2021」也榮獲「年度最佳中國葡萄酒」、「西鴿 N28 霞多麗 2021」則奪得「最佳白葡萄酒」殊榮。這些獲獎葡萄酒皆在「譚卉」大放異彩,成為食客們的新寵。

Savor the Finest Wines

For discerning connoisseurs, the pairing of exquisite cuisine and fine wine is the ultimate sensory delight. At “Chef Tam’s Seasons,” guests are treated to this extraordinary experience, guided by chef and professional sommeliers through wine pairings that harmonize with the dishes. In recent years, Chinese wines have been gaining significant recognition over the market, notably at the “Wynn Signature Chinese Wine Awards.” Among the selections, the Longting Vineyard Reserve Petit Manseng 2020 from Penglai, Yantai in Shandong, China was particularly outstanding. Its refreshing, pale yellow hue and vibrant aromas of lemon, passion fruit, cream, honeysuckle, and wood barrels make it an ideal pairing with Cantonese-style appetizers. Followed by “Fei Tswei Maeselan Reserve 2021,” which was awarded “Best Wine of China,” and the “Xige Estate N28 Chardonnay 2021,” secured the title of “Best White Wine.” These award-winning wines shine with the signature dishes at “Chef Tam’s Seasons,” have become the new favorites among connoisseurs.

未來展望

「譚卉」在主廚譚國鋒的帶領下,仍持續往追求卓越的目標邁進,除了以順應時令為基礎外,也期許融入更多中西方的料理手法與文化。此外,永利將持續推廣中國葡萄酒,6月於永利拉斯維加斯在國際餐飲盛事「世界50最佳餐廳」之際,來自永利澳門的三位「亞洲50最佳餐廳」名廚譚國鋒、江振誠、張志成通過震撼全球美食界的八手聯彈盛事,打造前所未有的世界頂級佳餚;活動匯聚各國飲食界專家及媒體,通過活動作為平台介紹獲獎中國葡萄酒的特色與風味,讓中國葡萄酒在國際發光發亮。未來透過永利集團的「永利臻典——中國葡萄酒大賽」,期待讓更多業界人士、國際媒體以及賓客們見識到中國葡萄酒醇厚的魅力,繼而打造出一個普獲肯定的中國葡萄酒世界舞台!

Under the leadership of Chef Tam Kwok Fung, “Chef Tam’s Seasons” continues to strive for culinary excellence. Building on the foundation of seasonality, Chef Tam endeavors to integrate more Eastern and Western culinary techniques and cultures into his dishes. Wynn Resorts will continue to promote Chinese wines worldwide. In June, during the prestigious international dining event “World’s 50 Best Restaurants Awards” at Wynn Las Vegas, three acclaimed chefs from Wynn Macau—Chef Tam Kwok Fung,  André Chiang, and Zhang Zhi Cheng, created a once-in-a-lifetime gastronomic experience pairing world-class Chinese cuisine with the finest Chinese wines. This global gathering hosting culinary experts and media served as a platform to highlight the distinctive characteristics and flavors of award-winning Chinese wines, starring their excellence on the international stage.
