台灣美式餐飲龍頭「貳樓」董事長——黃寶世,深耕餐飲業多年,經營餐廳是畢生志趣,同樣是他感受「生命力」的方式,市場上所推崇的資本化經營並不為他所追求的完美道路,他更希望保持創業時的初心,為每家「貳樓」注入專屬DNA,讓所有走進「貳樓」的顧客感受到像「家」一樣接貳連三的美好與溫暖。
The chairman of the popular American-style restaurant chain in Taiwan, Second Floor Cafe, is Frank Huang. With years of experience in the catering industry, he has devoted his life to running his restaurants. Unlike the market trend which focuses on maximizing profits, he pursues a path that preserves his spirit of entrepreneurship, aiming to spread the Second Floor Cafe DNA to every branch, creating a home-like environment for each guest, and embodying the beauty of things coming in twos and threes.

第一個家 First Home
對於16歲就開始在餐飲業打滾的黃寶世來說,創業一直都是他的目標,如今屹立於台灣的人氣美式餐廳「貳樓」其實就是他的第三次創業,相較過去的創業經歷,他反倒選擇以興趣作為出發點,去經營這個對顧客以及自己而言像是「家」的地方,因為黃寶世從小就跟著父母在外租房,有一個自己的家是他的理想,所以當初在敦化南路創店時,原希望只有一樓作為店面,不過由於生意實在太好,原先要作為個人住家的二樓,就順勢成為顧客的用餐空間,而響亮的餐廳品牌名稱「貳樓」也就此誕生。
Frank Huang began working in the catering industry at the age of 16, and entrepreneurship had always been his goal. Second Floor Cafe, a popular American-style restaurant chain in Taiwan, is his third entrepreneurial venture. Different from his past experiences, Second Floor Cafe derives from his own interests and his dream of creating a space that feels like “home” for both the guests and himself. Frank Huang grew up renting homes with his parents, so he longed to have a place of his own. Initially, when he opened the store on Dunhua South Road, he intended on only using the first floor for his restaurant. However, due to the restaurant’s overwhelming success, the second floor, which he planned to use as his personal residence, became an additional dining space for the guests, and with it came about the restaurant’s brand name: Second Floor Cafe.

零到無限 Zero to Infinity
在競爭激烈且變化快速的餐飲市場中,「貳樓」之所以能佔有一席之地,必定有不可取代的特色與優勢,對此黃寶世認為「營運品質」與「新鮮感」是關鍵要點,除了餐廳系統化組織是必須維持的基本面外,他也深知隨著世代的改變,多元創新絕對是不可擋的趨勢,所以他決定要讓每家「貳樓」都注入不同的DNA,像是考量到當地人文歷史,位在台南的分店就以洋行為主題、台北的微風南山分店則以時尚為主題;此外,過去疫情的肆虐對他來說也是一大挑戰,即使是賠錢也必須讓品牌存活下去,對於當初那些不斷支持「貳樓」的顧客們,黃寶世只有道不盡的感恩,因為有他們的存在「貳樓」才得以從負回到零,而現在「貳樓」更要帶著這期間所得到的養份,從零往無限邁進!
In the fiercely competitive and constantly changing dining market, the reason Second Floor Cafe can maintain their status must be due to its irreplaceable characteristics. According to Frank Huang, “operational quality” and “freshness” are the key points. While maintaining the fundamental aspects of a systematically organized restaurant, he recognized the importance of embracing diversity and innovation, and decided that each Second Floor Cafe should embody different DNA’s. For example, considering the local cultural history, the Tainan branch is themed around the concept of a foreign trading company, while the Taipei Breeze Nan Shan branch boasts a more trendy theme. Even through the pandemic, Frank Huang was determined to protect the brand even if it meant operating at a loss. He expresses profound gratitude to the guests who continuously supported Second Floor Cafe during such challenging times, and due to their support, the brand is ready to move from zero to infinite!
愛屋及烏 Love Me, Love My Family
或許大家印象中「貳樓」多以女性客群為主,其實從家庭客、毛小孩到老人家等,都是他們想好好呵護的對象,因為身為三個孩子父親的黃寶世,更能夠站在使用者的經驗上去替顧客的需求著想,所以他秉持愛屋及烏的概念,去關照客群們所攜伴的對象,他更提到:「要超越顧客的預期,讓他們知道我們有在關注他們。」無論是提供哭鬧的兒童畫筆、背行動不便的老人上樓,或是給予深陷低潮顧客們鼓勵,都是「貳樓」盡所可能想達到的,加上員工們都相當認同這樣的經營理念,不需上級特別告知,他們就會主動去做,分店間甚至還會互相效仿,因此黃寶世認為比起制度化的訓練,這樣是更有生命力的!
Perhaps, Second Floor Cafe appears to be mostly popular among female customers; however, families, children, and the elderly are also greatly taken care of. Being the father of three children, Frank Huang is better able to put himself in the guests shoes, and understand their experiences and needs; he mentioned, “We need to exceed their expectations and let them know that we care about them.” Whether it be providing crying children with art supplies, helping the elderly climb upstairs, or giving encouragement to customers going through tough times, these are all services that Second Floor Cafe strives to achieve, and employees are very supportive of this management philosophy. Without specific instructions from the superiors, employees take the initiative to provide such services, and learn from one another between branches. Therefore, Frank Huang prefers this approach to formalized training.

善的循環 Virtuous Cycle
黃寶世一直以來也持續地進行助學、慈善等相關活動,針對慈善這塊他也非常講求效率,做善舉能夠影響的對象很重要,對他來說印象最深刻的一次慈善捐助就是幫助台北市的清寒家庭,他提到:「你每投注一分錢,必須要產生後面的漣漪。」因為他並不是在優渥的家庭環境下長大的,成長過程中也接受過許多人的幫助,所以他不將現在所擁有的一切視為理所當然,更希望的是用自身能力來達成一個「善的循環」,並且將這理念貫徹到整個「貳樓」的經營之中!
Frank Huang has always taken part in scholarship and charity activities. When it comes to charity, he places emphasis on efficiency and the recipient. One of his most memorable charity activity was when he assisted underprivileged families in Taipei City; he mentioned, “Every penny you invest must create a ripple effect.” Having grown up in a less privileged environment and received help from others, he doesn’t take his current status for granted and hopes to use his powers to create a “virtuous cycle”, all the while incorporating this philosophy to the management of Second Floor Cafe.
